Paleo Turkey Chili


guess who is back another crockpot creation?! are you surprised?!

Chili is one of my favorites, but beans don’t always agree with me. I was hesitant to attemp chili without the beans because I feel like beans are the key to chili, but I was pleasantly surprised with how DELICIOUS it came out! Obviously the crockpot is not necessary, but I love simple ways of cooking and I don’t like feeling chained to the stove.


  • 1 1/2-2 lbs ground turkey

  • 2-3 cloves garlic, choppes

  • 1 large onion (I use red but whatever floats your boat!)

  • chopped celery, as much as you prefer

  • choppped carrots, as much as your prefer

  • 2-3 zucchini, chopped

  • 1 eggplant, chopped

  • chopped peppers, as much as you prefer

  • 1 15-ounce can tomato sauce/paste

  • 2 15-ounce cans fire roasted diced tomatoes

  • chili powder, to taste

  • cumin, to taste

  • oregano, to taste

  • salt, to taste

  • water/broth - as much needed for desired thickness

Brown meat in oil and seasonings of your choice before adding to the crockpot. Add all chopped veggies and other ingredients to the crockpot and cook on HIGH for 4 hours. Top with cheese if you want, and enjoy! This also freezes REALLY well and tends to make a lot, so make sure to have some extra tupperware on hand!

Slow Cooker Jackfruit Tacos


I have wanted to cook with jackfruit for forever, but was so nervous to try it. I have got to say - I am so glad i finally did!

I found this recipe from The Foodie Physician and ended up tweaking it a little bit because I didn’t have all th ingredients/wanted to get rid of some stuff in the fridge! Slow cookers are my favorite way to meal prep because you don’t have to take a huge chunk of time out of your day, you can make a lot at once, and its easy cleanup!

  • 1 onion, chopped (I use onions)

  • 4-5 stalks celery

  • 1 can black beans

  • 2 15 oz cans Jackfruit

  • 2 cloves garlic

  • 1 can chipotle peppers in adobo, chopped (JUST THE PEPPERS)

  • 1 teaspoon of the adobo sauce from the can

  • 3/4 cup water

  • hot sauce, to taste (I used Aldi’s New Orleans Style)

  • cumin, oregano, salt, to taste

GOt the ingredients? Awesome. Literally all you have to do is chop everything up, pull apart the jackfruit,  and put it in the crockpot. cook on high for 2 hours, stirring occasionally. when it’s all done, place “meat” on a baking sheet and broil for 5 minutes.
